Instructions
  1. beat the 3 egg whites and yolk in dish
  2. add the coconut oil to the pan and fry the chilli and tomatoes add the spring onions. then add the spinach last allow to wilt
  3. add the beaten eggs to pan and cook until omelette starts to become firm
